Keto Caprese Salad Recipe

  • ½ Heirloom tomato
  • ½ cup fresh mozzarella
  • ½ tablespoon olive oil
  • Balsamic glaze
  • Fresh basil
  • Salt and pepper


  1. In a small saucepan combine ¼ cup of balsamic vinegar and 2 tablespoons of erythritol. Simmer on low heat for about 5 minutes or until sauce begins to thicken. Let cool.
  2. Slice tomato and mozzarella and layer. Drizzle with olive oil and glaze. Top with basil and salt and pepper. Enjoy!
