Keto Caprese Salad Recipe
1 serving | 355 calories | 27.5 fat | 20.5 protein | 5.5 carb
- ½ Heirloom tomato
- ½ cup fresh mozzarella
- ½ tablespoon olive oil
- Balsamic glaze
- Fresh basil
- Salt and pepper
- In a small saucepan combine ¼ cup of balsamic vinegar and 2 tablespoons of erythritol. Simmer on low heat for about 5 minutes or until sauce begins to thicken. Let cool.
- Slice tomato and mozzarella and layer. Drizzle with olive oil and glaze. Top with basil and salt and pepper. Enjoy!
